Chicken Kofta

This recipe is SUPER easy and has a ton of flavor. The spices give it a mediterranean lemon-herb flavor. They can be oven roasted, pan seared, or grilled- though my preference is grilled. Great throughout the week and paired with salad, grilled vegetables, or rice.

Meat skewers

Prep Time: 20 minutes

Ingredients:

  • 1 lb ground chicken
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Zest of 1 lemon
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 – 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 tsp coriander

Preparation:

  1. Gently mix ground chicken and spices. Don’t overwork the meat: it will get gummy.
  2. Form into 8 large balls or logs. You can use skewers if you prefer.
  3. Cook them:
    • Grill: Medium-high heat until the interior reaches 165°F, about 10-15 minutes, turning halfway through- a food thermometer is your friend!
    • Oven: Roast at 400°F until the interior reaches 165°F.
    • Pan sear: Medium-high heat until the interior reaches 165°F, about 10-15 minutes, turning every few minutes.

*You can roast or pan sear, but grilling takes this recipe to the next level. If you don’t have an outdoor grill, a Foreman Grill is the next best thing in my opinion.
