Street Tacos
This is an easy-to-make meal, I just have to think ahead since I don’t always keep some of my favorite toppings (like cilantro or avocado) on hand. Also, be sure to char or heat corn tortillas, it makes a huge difference for the flavor!
Make this even easier by keeping some ingredients frozen and ready-to-go, like your protein and even peppers and onions (many grocery stores sell a frozen pepper/onion vegetable blend).

Prep Time: 30 minutes
Ingredients:
- Corn tortillas, soft (check that these are marked gluten-free)
- Meat/Protein: Beans, chicken, shrimp, fish, ground/shredded beef, steak
- Well-seasoned meat takes these tacos up a notch. You can use taco seasoning (here’s a Badia Taco seasoning), but also try Sazón, or fajita seasoning (here’s a DIY fajita seasoning recipe, or I like Badia brand spices since most are labeled gluten free: Badia Fajita Seasoning)
- This can be prepped in advance.
- Sautéed vegetables: Sautéed peppers & onions, mushrooms
- These can be prepped in advance- saute with a bit of the same seasoning as is on your protein
- Toppings: Shredded cheese, jalapeños, cilantro, chopped tomato or pico de gallo, chopped red onion, salsa, sour cream, avocado
- If you don’t often use shredded cheese, keep the bag in the freezer.

- Preparation: This is really just assembly once you’ve cooked your protein and vegetables, and chopped any other toppings.
- Be sure to char the tortillas on a grill or an oiled skillet, it brings out the flavor!
Chicken Tacos:
- Ingredient combo:
- Chicken breast
- Mexican blend shredded cheese
- Cilantro
- Shredded lettuce
- Red salsa or pico de gallo
- Sour cream
- Slice large chicken breasts in half, pre-season chicken breast and let marinate (I recommend chili lime seasoning, fajita seasoning, or your favorite grilling seasoning).
- Grill or pan sear the chicken until the interior reaches 165°F (a food thermometer is your friend!). Let sit for 5-10 mins before slicing into strips (for juiciness).
- On a grill or an oiled skillet over high heat, char the corn tortillas
- Assemble and enjoy!
Steak Tacos:
- Ingredient combo:
- Skirt or petite sirloin steak
- Sautéed peppers & onions
- Shredded cheese (mild white: like quesadilla, mozzarella)
- Cilantro
- Green salsa
- Sour cream
- Pre-season steak and let marinate (fajita seasoning, salt & pepper, or your favorite grilling seasoning).
- Grill or pan sear the steak until the interior reaches your desired doneness (I prefer medium rare to medium). Let sit for 10 mins before slicing into strips (for juiciness).
- Saute peppers and onions in oil with a bit of the same seasoning.
- On a grill or an oiled skillet over high heat, char the corn tortillas
- Assemble and enjoy!
Shrimp Tacos:
- Ingredient combo:
- Raw shrimp (medium size)
- Sautéed peppers & onions
- Mexican blend shredded cheese
- Cilantro
- Red or green salsa (or mango salsa if you can find it!)
- Sour cream
- Remove shells and pre-season shrimp, let marinate (lime juice, chili lime seasoning, fajita seasoning, or your favorite grilling seasoning).
- Saute peppers and onions in oil with a bit of the same seasoning.
- Grill or pan sear the shrimp just until they turn pink (they cook quickly- do not overcook!).
- On a grill or an oiled skillet over high heat, char the corn tortillas
- Assemble and enjoy!
